Here’s a super quick and healthy dinner for those extra busy nights!
All of the items shown in the picture are available at Costco or Trader Joe’s and I keep them all on hand at all times. I am missing the toasted sesame oil. 🙁 I buy that at TJ’s!
So… while the frozen salmon patties are cooking in one skillet, I have another skillet going with stir fry. They take about 8 minutes on medium/low heat. I do flip them after about 4 minutes.
I use 1 teaspoon coconut oil and 1/2 teaspoon toasted sesame oil.
Since the broccoli is frozen, I put that in the skillet first and then add red pepper, carrots, whatever veggies you and your family enjoy. When I add the thawed veggies, I also add my seasonings: 21 Seasoning Salute, Himalayan Pink Salt, Ground Black Pepper.
In the last minute of cooking I add some Braggs Liquid Aminos to the veggies.
Once the veggies and salmon have been plated, I squeeze some lemon over the salmon for some extra flavor!
Need some grains for the day? Quinoa is quick to make and easy to have ready a few days in advance.
