Quinoa is a great alternative to rice!
Quinoa is actually a seed and is high in protein, iron and calcium!
Prior to cooking, be sure to rinse it thoroughly to prevent a bitter taste. I use a mesh strainer under cold water.
Quinoa is also very versatile. You can cook it in different liquids which allows the quinoa to take on more of that flavor. For example, if you would like to use it in a fruit salad, you could cook 1 Cup quinoa in 1 Cup orange juice and 1 Cup water. If you are serving it with a chicken dish, you could cook it in 1 Cup chicken broth and 1 Cup water.
Cooking quinoa is easy. Just cook in a 1:2 ratio of quinoa to liquid for approximately 15 minutes at a gentle simmer and then let cool for about 10 minutes. Then fluff it with a fork and it is ready to eat alone or combine with any other dish.
This is a super simple side even I can prepare without incident! That’s saying a lot for this domestically challenged menopausal mom!
